The monsoons I believe is an epidemic. Hoards of people have copycat symptoms that mostly revolve around lethargy, desperate need to eat hot pakodas and drink hot tea. Others,more severely affected, start feeling tingling sensations when they look lovingly into their partners eyes, not realizing that its nothing but common sense leaving their bodies and nothing to do with love. Its a disease I tell you. Im infected too. Lunch time found me staring blankly at the tinda aloo my cook had made. So, I decided to beat this by cooking. But since I was still in limbo, I cooked my all time favourite go to lunch when other stuff at home doesnt call out to me. Vegetable Masala Rice with Raita. Ingredients: 1. Boiled rice - 2 cups (Did you actually think i was going to bother boiling rice?) 2. Frozen peas, defrosted - 1 cup 3. Potato -1, cut into pea sized dices 4. Tomatoes -2 small, cut into slightly larger dices. 5. Onions -2 medium, cut into pea sized dices 6. Green chillies - 2 or 3, slit 7. Garlic - 8 to10 flakes, chopped fine 7. Coriander leaves - a handful, chopped 8. Garam masala powder 1 tspn 9. Salt - to taste 10. Ghee - 3 tbspns (yes, forget your diet) 11. Lime juice - optional Method : 1. Heat the ghee in a pot and then add in the slit green chillies, chopped garlic and stir fry for a minute. 2. Add in the onions and cook them till they turn golden brown. 3. Add in the potatoes and peas as well as the salt, garam masala powder and 1/2 the coriander leaves and mix well. Cover and cook till done. 4. Once the veggies are cooked, add in the diced tomatoes and toss well. Add in the boiled rice and the rest of the coriander leaves and cook till the tomatoes are cooked but havent lost their shape. 5. Serve hot with a squeeze of lime juice (optional) accompanied by a raita. Raita: 1. Beat 1/2 a tub of Nestlé A+Yogurt till its smooth. 2. Chop a cucumber and tomato into small dices. Chop a tspn of coriander. 3. Add all the vegetables to the beaten yogurt.
