The revival of the All American Oyster bar arrives through Pearl Tavern this winter on the banks of the Chicago River. Restaurant developer Adolfo Garcia is enthusiastic about ventur- ing on his own with the inception of Pearl Tavern. It has been a great aspiration of his to develop such a concept, in a historical location that will revive the spirit of one of the oldest taverns in the loop, Coogans Riverside Saloon. Paramount in developing Pearl Tavern’s menu, was to create selections that respect and pay homage to the classic, authentic oyster bar. Chef Chris Lorenz honed his culinary skills work- ing along side Mauro Marfrici and Jean Joho in the finest kitchens in Chicago. Adolfo recog- nized that such experience in dining would contribute to the refinement of his vision for Pearl Tavern’s offerings. Despite Chef Lorenzs pedigree, he is a self-proclaimed kitchen rat. This devotion to his craft brings Chicago a menu that includes selections of pristine oysters from both coasts, rotating fresh crudos and shared plates such as sword fish au poive and grilled octopus with caponata. Just as the integrity of a classic oyster bar menu was kept, Adolfo has approached the design of the space with the same sensibility of preservation. Respecting the history and craftsmanship of the location, the 80 year old ceilings were restored as well as the detailed mill work. It was vital to design a space that will evoke a specific energy and sharing atmo- sphere, having combined the right style of seating while utilizing the Chicago River as the backdrop. Invoking the spirit of Pearl Tavern’s emblem, the room is adorned by works of art honoring the mythical creatures of the sea. Essential to the completion of Pearl Tavern was the development of a beverage program boasting simplicity at its finest.
