The tutorial "Pattern and Paint" in the July/August issue of ACD mentions and shows the use of a graphite pencil for drawing a pattern outline on fondant. This has caused some controversy—some readers have stated that pencils are not food-safe and should never be used, while others have commented that graphite is known to be non-toxic and that graphite pencils are even approved for use by pre-schoolers (who as we know, love to stick almost anything in their mouths!) In her tutorial Kelly Zubal uses a graphite pencil, but clearly states in the "Design & Assembly" section that a food-safe marker in yellow would be an alternative for anyone who has concerns about the use of a graphite pencil. To clarify, graphite is not lead, and ingestion of graphite has no known or registered side effects. But non-toxic is not the same as food-safe which is why the food-safe marker option is mentioned. We acknowledge we could have made sure that option was included in the step-by-step section as well as the Design & Assembly notes for those concerned with this issue.
