These are a very good Christmas cookie. Chocolate Covered Cherry Cookies 1 1/2 cups flour 1/2 cup cocoa 1/4 tsp salt 1/4 tsp baking powder 1/4 tsp baking soda 1/2 cup softened butter 1 cup sugar 1 egg 1 1/2 tsp vanilla 10 oz. jar maraschino cherries - drained but save juice Preheat oven to 350 degrees. In a large bowl, stir together flour, cocoa, salt, baking powder and baking soda. In mixing bowl, beat together butter and sugar on low speed of electric mixer until fluffy. Add eggs and vanilla. Beat well. Stir in dry ingredients. Mix well. Shape dough into 1 balls, place on ungreased baking sheet. Press in center of each cookie and place drained cherry in thumbprint. You will add the frosting before baking these cookies. Frosting: 6 oz. semi-sweet chocolate chips 1/2 can sweetened condensed milk Melt together in microwave. Stir in 1 Tbsp of drained liquid from cherries. Spoon 1 Tbsp of chocolate mixture over each cherry. Bake 10 minutes. Dough balls should equal the number of cherries in the jar perfectly.
