Think some peaches are going to be canned today. Always hated the water bath canner cause it was hard getting enough water over the top of the quarts w/o splashing all over the stove when it boiled. I mentioned it once to my mother in law and she said she never had that problem. Well once I was over at her house when she was canning and found that she was using the pressure canner and the water bath lid. The pressure canner is at least an inch deeper than the water bath. Also you can take the rack out and buy the flat piece that fits in the pressure canner at a lot of places where they sell the equipment. (bi mart) Bill made me one for my water bath. Works much better than the rack.
