Thinking about my next steps in life, after my Ed retires in ten years and our daughter is going to college, I know we will be building a log cabin in our community, Eagle Rock. Now, never sitting still, I thought about what I would do up there. I wanted to run a food cart, but not a large menu just a choice of hot soups, and pierogi. Now, rosol would be a staple, with chili and one other selection. Warm rolls to accompany each soup purchase. SO, I surveyed my neighbors and they all said, concentrate on the pierogi because the trucking business is massive and they want to eat hardy. But if you add a homemade rosol, its a winner. We revert to what made us feel good and have a loyalty to, I feel a twang of guilt enjoying hummus and salsa so much. Im thinking about using my Polish name for the business, DANUSIAS.
