This Weeks Special: Elk Rack Chops Two large chops marinated with garlic, lavender and black pepper, offered two different ways: Classic Pajaro: with blackberry hoisin sauce, veggie pie & Creamy polenta $27 Single Chop Option: with veggie pie & Creamy polenta $16 High Mex: dark roast chile rubbed, veggie pie & Creamy polenta topped with a tomato, black bean and corn salsa, and a nest of fried jicama and a drizzle of tamarindo $27 Single Chop $16 What I call High Mex cuisine is the use of high quality food with familiar Mexican/Southwestern flavors. Special attention is given to color, texture and height. I will be offering more of these so our Salinas palates can experience treats like you can experience at a high end City restaurant in Mexico. *This is a favorite Pajaro Street treat - perhaps the best red meat you will ever have!!
