This hit the spot tonight! Black-Eyed Pea Soup 1 TBL olive oil 10 oz. bag frozen seasoning blend 8 oz. diced ham 2 (14.5 oz) cans chicken broth 4 (15 oz) cans black-eyed peas with ham seasoning (undrained) 1 (10 oz) can diced tomatoes with green chilies, (I drain mine) 1 (14.5 oz) can diced tomatoes, undrained 2 cloves garlic, finely chopped Freshly cracked black pepper BeaZells Cajun Seasoning Cooked rice Heat the olive oil in a large saucepan over medium heat, and cook the seasoning blend, stirring constantly until wilted. Add diced ham, stir until heated. Pour in chicken broth, black-eyed peas, diced tomatoes with green chilies, diced tomatoes and garlic - stir. Bring to a boil, reduce heat to low, and simmer 50 minutes. Add water if soup is too thick. Season with fresh cracked black pepper and BeaZells to taste. Serve over rice.
