This is NOT an ad for Sarentos... You all know how much I like my job. My bosses, Tom and Brigette Field, took me in back in 2006 and have treated me like a member of the family for 8 years now. They have given me raises and bonuses that I never had to ask for. They have never said a word about what I should play or what hours I should keep. They have even taken me on vacation with them. Robert and Kim Field treated my wife and I to an incredible day in Chicago where we dined at the incomparable Joes restaurant, saw Jersey Boys, and finished off the night at the legendary Redhead Piano Bar. Tom and his brother Robert came out to Las Vegas when I was in the Big Show with Cheap Trick. Thats the kind of support Ive never had from bosses, or even from friends before now. But this is not a sales job for Sarentos... And I actually started out with a plan to write about the Sarentos kitchen. First of all the recipes are set up by Toms oldest brother, Tim Field. All the methods and procedures and how-tos are documented and followed to a T ( spoon ). The kitchen manager is Toms sister, Pat Field Cahoon. She handles inventory and staff, she makes all those wonderful sauces and every day she prepares huge pans of that fantastic lasagna and everything else. But one of the most interesting things about Toms kitchen is the fact that all the work is done by a great team of Mexican men....who have all been there since before I started 8 years ago...!!Say what you will about immigrants. These are even-tempered, intelligent hard-working guys. More than half of them have other jobs as well. They remind me of my father and his contemporaries back in the Fifties, and how hard they worked to support their familes. I speak a lttle Spanish and I love to walk through the kitchen during busy hours and holler out Mas rapido! Mas rapido! which means Faster! Faster! I always get a smile. Now a lot of the reason the staff shines, has to do with the persons who manage things. Tom Field, his sister Pat Cahoon, and the restaurants General Manager, Caleb Hayes ( alias Joe Sarento ) all work wonders with all of the many staff members in the front and back of the house. I walk through the kitchen every day when its busy and also when its closed for the night....and theres never anything out of place. The whole team works hard at cleaning up each night. When theyre done, it never smells like food or beer or even pizza. It smells fresh and clean. And this is a big kitchen. You might think Im making this up, but Im not. If you doubt me come in some Thursday night after 10, and Ill show you. I once saw Robert Field on his hands and knees with a small brush cleaning around the bases of a handrail. I couldnt believe it and I told him so. Anyway, you might think Im biased, but Im really happy and proud to be associated with this bunch. Thanks for reading. Onward.
