This is a recipe of sorts, I dont measure so taste as you go! Cannoli Cups 15 oz or 1/2 of a large container of Ricotta Cheese (I use whole milk) 2 tablespoons of sugar 1/2 cup of confectioners sugar ( I do this by taste) 1-2 teaspoons of Vanilla extract (I use pure Vanilla) mix together in a stand mixer or you can use a hand mixer just longer time, be sure its very creamy. Put in a pastry bag or a ziploc bag, store in fridge for at least an hour. For the pastry: Use any kind of pie crust (I make mine) cut with a biscuit cutter into round discs place in a cupcake liner, sprinkle equal amounts of sugar and cinnamon into the shell bake at 425 degrees until they are slightly brown maybe 5-7 minutes (be sure to poke a couple of small holes into the pastry shell so it doesnt balloon up in the oven. Once the shells cool, cut a hole in the ziploc bag or pastry bag and put into each shell, filling it up. Then I use dark chocolate chips and place onto the cannoli cream. And thats it!
