This is an amazing tasting cheese, however I find it very salty, and if it that can be reduced, this is perfect cheat food. The balance of the creamy texture and lemon and salt flavor is insane and wonder what Greek beer or wine (Red or white) would pair with this most delicious of international foods. I would use a rose` wine something say from Portugal, or more specific Mateus chilled perfectly, served with coasters representing the Greek colors, and the hors doeuvres fresh off the grill Portuguese piri-piri chicken served on silver platters along with a silver chalice as a take home gift for the guests to enjoy the wine and any other beverages at this affair and any other functions, as they drink and eat in celebration of life, as God (ptah) did when he created all things, from which many came from the words of his mouth and many was the thing that came forth from the depth of thought and the power over the imagination that is all and is everlasting. I can see this cheese being used on a thin crust pizza, with a light sauce and herbs, or served in bite size pieces, all the same the flavors should have your eyes rolling up into your head from the overload, however, like with all things, dont overdo, moderation and pace yourself as ot can pack on the weight if you over indulge. This process is amazing, and it is important to Greek culture and pride that they continue to teach thier children thier heritage and ensure they show respect to thier elderly, as it is through thier efforts that that which comes advance through the depths of time.
