This is how we prepare a traditional salad in my homeland, Aragon, in the NE of Spain. As you see the preparation is really simple: lettuce, tomato, sweet onions, tuna, asparagus, hard boiled egg and the star of the dish, empeltre olives, a local and really appreciated olives variety. These olive trees are one of the oldest in Spain, and they make an oil soft and fruity, perfect for salads. The flavor is similar to kalamata olives.
