This morning on 9 News Perth I learned how to cook the most amazing paella thanks to Chef Naomi Bulner at Steves Fine Wine & Food in Nedlands. Ill be making this for the family on Christmas Day for sure. Check out the pics and heres the recipe. Enjoy!!!! Lise. xxx Chef Naomi Bulners Christmas Paella Soffrito: 3 Brown onions 5 Ripe tomatoes 1 Small bunch of coriander with stalks, roughly chopped 4 Garlic cloves, finely chopped 3 Whole smoked chorizo 3 Whole fresh mild chorizo 2 Small packets of saffron 1.5kg Callarpara rice (Arborio works as well) 1 Bottle of dry white wine 3Lt Good quality chicken stock Any fresh seafood. We used - Mussels - Clams - Tiger prawns - Pink snapper - Fresh squid tubes 1 cup of peas Coriander & parsley roughly chopped to garnish Lemon & lime wedges to garnish Heat up good quality evoo Add chorizo and sautee until browned Add soffrito & saffron. Stirring onions until they have softened Add rice, stir thoroughly Spread rice evenly throughout pan and add wine Once wine has reduced, begin adding stock Cook for 20mins and top with seafood and peas Season & cover with damp tea towels for 5 mins Once seafood is just cooked garnish with parsley & coriander, lemon and lime wedges and drizzle with evoo
