This mornings sudden brainwave where breakfast was concerned. Half a tin of plum tomatoes (which were leftovers) mixed with a little tomato ketchup, lots of pepper and a little tabasco. Add an egg into the middle of it all (but dont stir!), then grate a tiny smattering of cheese over the top. Put into a 180deg oven (or if youve a combi oven, use the grill/convection/microwave option for even speedier cooking) for around 30 mins and tuck in. Its really, really good and works out at around 200 calories! My tummy now has a happy. :)
