This used to be top-of-mind for a lot of people with celiac disease, but fortunately the attention it gets seems to have dropped in proportion to the [tiny] risk. The devastating lymphoma (abbreviated EATL, for enteropathy-associated T-cell lymphoma) that is seen in association with celiac disease is how understood much better than it used to be, and that has resulted in a much better diagnostic strategy. Basically, there are two critical phases in celiac disease at which the risk of the lymphoma appearing is concentrated (one is initial diagnosis, the other is tricky to explain and happens pretty rarely itself). So looking extra closely at only the right times has made this complication manageable.
