This was my inspiration and Mary helped me. Stuffed shells two kinds. First butternut squash, parmesian, garlic, oregano, and yoghurt. Second, acorn squash sage, yoghurt, garlic olive oil. Stuff the shells and cook on a bed of spinach and sauteed red onion. I garnished it with the toasted squash seeds and crushed red peppers. Very nutritious and high in blood pressure healthy minerals like potassium. This was our 2nd vegetarian dinner this week. We are carnivores through Sunday.
