This was our lunch today. Literally took me five minutes so Im calling it five minute salad. Tossed together about 2 cups of leftover quinoa from 2 nights ago, rinsed a can of black beans and tossed it in, grated 2 organic carrots, added 1/4 cup of walnuts, about a tablespoon of black sesame seeds, a good handful of red clover sprouts and chopped up four green onions. I never measured anything those are just guesses. I cant be bothered to wash measuring cups. Lol. Then I made a dressing out of pumpkin seed oil, a clove of garlic, some maple syrup and apple cider vinegar. It was fantastic! I really like sprouts and I know theyre not on the list but this is just an example of how you can participate in the #healthyroots campaign at your own level of commitment using the healthy foods you already like to eat and making indigenous foods a priority in your meals. Keep sharing your pics guys this is super inspiring!!
