This weekend, we featured yet another recipe using our Pumpkin Pecan quick bread. This is definitely in the running to be one of our favorites! This new recipe takes the flavors of the classic pumpkin roll and turns it into a cookie! Pumpkin Roll Sandwich Cookies Ingredients For the Cookies 1 Pkg Pumpkin Pecan Quick Bread 1 1/2 Sticks of Butter melted 1 egg For the Filling 1 8 oz pkg Cream Cheese 1 stick Butter 1 tsp vanilla extract 2 cups Powdered Sugar Directions For the Cookies Preheat oven to 350 degrees. Combine quick bread mix, melted butter and egg together until well blended. Spoon onto cookie sheet and bake for 8-10 minutes. Cookies should be browned underneath but soft to the touch. Let cool completely on cooling rack. Spread or pipe cream cheese filling too one cookie and top with another, and then enjoy! For the Filling Combine softened cream cheese and butter, and then stir in powdered sugar and vanilla until blended smooth.
