This weeks recipe!!! Balsamic Croc Pot Chicken Yum! I absolutely love the flavors of this recipe, not to mention how absurdly easy it is! Break out your croc pots and lets get cooking!!! Ingredients: 4 Chicken Breasts 4 Cloves garlic 2 TBSP Olive Oil 2 Cups halved cherry tomatoes or canned diced tomatoes 1/4 cup basil leaves (I HIGHLY recommend fresh basil, this absolutely makes the recipe!) 1/2 cup olives pitted (optional, based on your like of olives, I tend to use capers just because that is what I have in my kitchen...and do not care for olives) 4 TBSP balsamic vinegar PS: I tend to 1 and 1/2 this recipe and make 6 chicken breasts at a time to make approx 12 servings. If you are making this for a family or 2 people to eat off of or if you are a male looking to maintain/gain and will be eating 1 1/2-2 servings at a time I highly recommend at least 1 and 1/2ing or doubling this recipe... Directions: Trim fat off chicken breasts if not organic/farm raised, place breasts in bottom of croc pot. Layer garlic, olive oil, tomatoes, basil, olives (optional), and balsamic vinegar on top of chicken. You can sprinkle black pepper and/or red pepper to taste on top or add to your own liking after cooked. Set croc pot to low for 6hrs and go about your life!! Enjoy!!! P.S.S: I typically take 2 forks and shred the chicken breast after it is done, you can either shred or cut breasts in half and then top breast with sauce when you eat. I often place this over fresh baby spinach in my lunch container and then heat it all up for lunch/dinner so the spinach becomes steamed and I get my serving of veggies in there. Feel free to eat over salad, hot or cold, or combine with a side of veggies. :) 1 Serving (1/2 breast): 201 cal/5.3g fat/ 2.3g carb/ 33.3g protein
