Thought I should share my moms pumpkin pie recipe...Erin talking now. Hey Rich.....what did you put in your pie? It looks dreamy!! Erins Pumpkin Pie Recipe (actually moms): Note: I prepare all ingredients before adding the eggs. That way I can taste and correct the seasonings to my liking. 16 OZ pumpkin purée ( canned is OK but hopefully home roasted) 12 OZ condensed milk (my mom used this - you can also sub half and half) 1/2 cup sugar (this is a tart pie - if you like it sweet - double the sugar! 1 tsp cinnamon 1 tsp ginger 1/2 tsp ground cloves 1 tsp molasses or maple syrup 1 tbsp dark rum 2 whole eggs Lemon zest oil - take 3 or 4 slices of lemon peel and squeeze into mixture. Let rind rest In mixture for 15 mins or more. Mix all ingredients except eggs. Taste. Correct. Whisk eggs well and add to pumpkin mix. (I am assuming you have a good crust recipe - if not i will get you my favorite from Julia Child. ) Pre heat oven to 425F Pour mixture into pie shell. Bake 15 mins and reduce heat to 350F. Bake an additional 45-50 mins. Cool. Enjoy!
