Tina Gorman I tried replying to your post about Salt Beef but its disappeared. Heres what I was trying to say, you might like to try it........ Weve lived in a couple of places where we couldnt get salt beef and had to make our own. I found it hard to find course salt, and also without Sodium nitrate/nitrite (saltpeter lol) your beef may look a little brown......still good but not as red as usual. I started using Morton Tender Quick. I always boiled my water, cooled it, then added the Tender Quick until an egg floated to the top.....then threw in an extra handful....just to be sure lol Let the beef sit in the fridge for a couple of weeks and it always came out very good. mortonsalt/for-your-home/culinary-salts/meat-curing-and-pickling-salts/178/morton-tender-quick/ Good luck with whichever way you make it!!
