To Batter or Not to Batter?? This is the formula I use when preparing Chiles Rellenos with an egg batter. Once the peppers are roasted, stuffed and dusted with flour, then comes the batter. Would love to hear of any tips you use when preparing them. :* Chile Relleno Batter * For 6 large Chiles Rellenos 6 large eggs, separated Directions In a large bowl, beat the egg whites until stiff peaks form. I find what helps me, is if I tilt the bowl slightly towards me as I am beating the eggs. This will create more air and make the eggs fluff and stiffen faster. Once the eggs whites are stiff, lightly beat the yolks and fold them into the batter with a spatula. Dont let the batter sit to long or it will start to separate. So have your chiles and oil ready to go as soon as the batter is done.
