Today is National Shortbread Day, and Mrs. Grissoms has a special treat to share! Weve got a delicious, quick and easy recipe for pimento cheese shortbread from chef Shelley Baltz that is sure to satisfy your impeccable taste buds! Please dont hesitate to share your finished product with us :) Pimento Cheese Shortbread Yield: 48 pieces (1 inch each) Ingredients 1 cup Mrs. Grissoms Old Fashioned SELECT Pimento Cheese 1 cup flour ¼ cup softened butter ¹/³ cup chopped pecans, optional Directions 1. With a hand or stand mixer, blend together all the ingredients until just combined. Form into a disc, wrap in plastic wrap, and refrigerate for at least 2 to 3 hours. 2. Preheat the oven to 400°. 3. Roll out dough on a floured surface to about 1/8 inch thick. Use a 1-inch round cutter to cut into about 48 rounds. 4. Place the rounds on a parchment-lined baking sheet about ¼ to ½ inch apart and bake for 20 to 30 minutes. You want them slightly brown around the edges. Allow them to cool on the baking sheet.
