Today is an exciting day as I get a cooking lesson not only from a great friend but also from an amazing cook! Such an amazing cook in fact that she put together all her delicious recipes into one incredible cookbook called The Alternative Autoimmune Cookbook! Welcome Angie Alt from Alt-Ternative Autoimmune! She has been visiting a lot of autoimmune bloggers this month on her ‘book tour’ and I am extremely lucky to get to have her all to myself today, not only to showcase one of her recipes but to also get a cooking lesson from the master herself! Today we are going to be making her Lemon-Rosemary Brined Pork Chops. This recipe is going to be perfect for dinner tonight as 1) we brined our turkey for Christmas again this year and I’m sorry folks…once you brine you never go back. So if this method is new to you, pay attention and consider using this one small extra step the next time you cook up something like this, as you won’t get a juicier or tastier cut of meat and 2) I have been enjoying dabbling with some re-introductions the past 6 weeks or so. One item, although AIP compliant, that I found out quickly was a no-go for me was citrus so I’m excited to be giving some lemon another chance and seeing what happens For this recipe, youll need the following ingredients: 1 cups filtered water 5 tablespoons salt 1 yellow onion, sliced 4 garlic cloves, crushed 4 sprigs fresh rosemary 3 bay leaves 1 lemon, halved 1/4 cup white wine vinegar 20 ice cubes 4 bone-in pork chops Stay tuned for the brining process which Ill get started 3 hours prior to when I plan on cooking dinner! #alternativeeatingchangedmylife #altautocookbook #aip
