Today was a busy day in the Bistro kitchen as I was working on some batch cooking to fill my freezers with make-ahead meals for busy evenings when I dont have time to cook. I have been batch cooking since the late 1970s when I went off to pursue secondary education. It helps me eat better (I rarely eat commercially-prepared or deli foods) and it saves on food costs. Today, I prepped 16 stuffed baker potatoes (Island spuds, of course), and 12 servings of manicotti.
