Todays Menu is : Mozzarella and basil stuffed chicken wrapped in bacon and served with garlic new potatoes. Ingredients: 500 g Chicken breasts defrosted (£10.00 for 5kg Asda) = £1.00 1packet mozzarella (44P Aldi) = 44p Fresh basil ¼ pot (89p living pot Aldi) = 22p 4 bacon rashers (£6.00 for 54 rashers FF) = 11p 1 garlic bulb = 1 p New potatoes (£1.14 750g) = 57p 1 tbsp butter – price depends on which butter. 10g Grated extra mature cheddar (5kg £5.00 FF) = 10p Grand total for 4 = £2.45 Method: Defrost the chicken and split the breasts in half, Slice the mozzarella and place inside the breasts along with the basil leaves. Fold the top over the mozzarella and basil and then wrap a rasher of bacon around each breast. Wrap in foil and cook for approx. 40 mins 200 degrees remove the foil when cooked and sprinkle a little grated cheese over each chicken breast. Grill to brown. Approx 20 mins before the end of the chicken breast cooking time – Boil the potatoes and when cooked drain and stir in melted butter with finely chopped garlic. Serve together .
