Todays cornbread recipe: 1 cup coarse cornmeal, 1 cup whole wheat flour, 3 teaspoons baking powder, a smidge of salt; combine. Add 1.5 cups milk, 1 egg, and a tablespoon (at least) of hot duck and bacon fat. (Okay, or just bacon fat, or melted butter.) Combine but dont beat too much. Heat the oven to 400F, put in a cast-iron skillet, heat it while you are mixing the batter, take it out, add some more fat (not butter) to coat the bottom, heat that another five minutes. Pour in the batter, spread it around a bit, bake 25-30 minutes or until the interior is 200F. Nice crunchy crust on the bottom.
