Todays tasty, healthy munch is herbed pumpkin chips. So easy and delicious for young and old. Trust me the kids will love them too. Use as an afterschool snack or pop a few into the lunch box... Just cut up pumpkin into chips or small cubes, coat in some coconut oil (you could use olive oil but I prefer not to heat olive oil to preserve the health benefits), and then coat in the salted herb mixture. Pop into a pre heated 180 degree oven and cook for around 45 minutes depending on your crispy preferences! Im sure that you can buy a herbed salt but I prefer to make my own so I know exactly what is in it. Salt is one of those things that can be very much chemically altered! Here, I have crushed some himalayan rock salt and tossed in some dried parsley, basil and rosemary as well as cinnamon. Cinnamon is a spice we often think of for sweet things but it is also delicious for savoury and has many health benefits including helping to control blood sugar. take2health baby devoured these today.... of course I couldnt get a good photo to show how happy she was!
