Tofu Poké Pronounced Poh-keh, Poke is a Hawaiian dish which in it’s earliest days consisted simply of fresh caught raw fish, Hawaiian salt, seaweed & kukui nuts (called Inamona in Hawaiin). Often also consisting of the ingredients you’ll see in this recipe, a trip to the fish markets in Hawaii now will bring you face to face with literally hundreds of types of Poke, even sometimes made with tofu (probably for us hippie tourists from the mainland). I’m sure you can come up with plenty of options for the tofu, but to borrow the words from the old union song... ‘you can’t scare me, I’m stickin to the tofu! 2pkgs (12-14oz ea) Medium Tofu 1 Avocado, diced the avocado should be ‘breaking’ but not soft, so it holds it’s shape when tossing 1c Macadamia Nuts, chopped 1/2c Maui Onion, chopped 1/4c Green Onion, chopped 1Tbl Soy Sauce, reduced sodium (or wheat-free Tamari or Braggs Liquid Aminos) 1/2Tbl Toasted Sesame Oil 1/2Tbl Fresh Ginger, minced 1Tbl Toasted Sesame Seeds 1/2Tbl Sriracha 1tsp Sea Salt (or 1/2tsp Kosher) Fold all ingredients together except the tofu and avocado. Gently fold in the tofu and avocado, chill 1 hour. Serve over baby greens as a salad or in cocktail glasses with rice crackers (shown) or wonton chips and garnish with Black Sesame seeds or nori strips (shown). SALUD!
