Tomorrow our baby girl turns 1. Since refining our diets I have put great thought into what sort of cake I would be preparing for her on this grand occasion. I whipped up a lovely organic red velvet cake utilizing puréed beets from my garden instead of red food coloring. The color is delightful. I make cake flour from whole wheat pastry flour and used tapioca starch in place of corn to avoid GMOs. Cant wait to sing my Princess happy birthday! All that is left now is some good icing!
