Tonights Dinner for Me! I love cooking chicken pieces in roasting bags. I find this a really healthy way of cooking as I can remove the skin (optional) and the chicken cooks in its own juices with no oil. The bag still allows it to brown on top for a lovely ‘roasty’ flavour and is delicious succulent chicken. Ingredients: 8 Chicken Pieces or One Braai Pack Mixed Dried Herbs (a mixture of any of the following: Thyme, Rosemary, Origanum and Basil) Generous seasoning of Dried BBQ Chicken or Chicken Spice Salt and Ground Black Pepper 1-2 Cloves of crushed garlic (optional), Juice of half a lemon Open bag, place chicken in, add your herbs, spices, garlic and lemon juice. Knot the bag at top. Place onto a baking tray. Bake at 180 for 45 minutes to 1 hour depending on your oven. You can also add your peeled potatoes to this optional.
