Tonights dinner was a tag team effort. Although Bacalhau Gomes Sa is Adrianas favorite dish to make, circumstances tonight required my help. She started by practically doing all the prep work involved, like peeling & cubing the potatoes to boil with the cod fish & eggs & peeling & slicing the onions to sauté them in EVOO. I finished by draining the water from the cod fish & potatoes, peeling & chopping the hard boiled eggs & tossing it all with the sautéed onions & some kalamata olives. I sprinkled some fresh minced parsley from their garden. Then I baked it in the oven for 10 min at 450 degrees or just until it gets a little crispy on top. Thank you for the inspiration Maria Victoria Castanheira. P.S. This reminds me of a deconstructed bolo de bacalhau.
