Traditionally, the Incas of Peru used heated stones (Pachamanca) to cook meat, potatoes, corn, and many other items that were part of their diet . Here at Los Cabos, we love to serve traditional food like like Papa a la Huancaina, Seco de Ternera,and Aji de Gallina (which by the way, are part of our All You Can Eat Buffet on Sunday), so we have decided to try and incorporate Pachamanca (earthen stone) into our buffet (as much as we can in a restaurant located in the heart of downtown Denver) offering a variety of items that you would find in a Pachamanca deep in the Peruvian Andes. Aside from the Pachamanca plate, we will have Anticuchos and Pansita as part of our Sunday buffet as well. And if you have a sweet tooth you havent been able to satisfy, come try our Picarones as well! We hope to see you this Sunday!!
