Turkey Recipes: Slow Cooker Turkey Breast (273 cal.) 1 6lb. bone in turkey breast 1 1oz. envelope dry onion soup mix --Cut off any excess skin (leave skin on breast) --Rub onion soup mix all over the outside and under the skin of the turkey --Place in slow cooker; cook on high for one hour --Then cook on low for 7 hours White Bean and Turkey Chili (286 cal.) 1 tbsp. canola oil 2 cups diced yellow onions (about 2 medium onions) 1 1/2 tbsp. chili powder 1 tbsp. minced garlic 1 1/2 tsp. ground cumin 1 tsp. dried oregano 3 15.5oz cans Great Northern Beans (rinsed and drained) 4 cups fat free less sodium chicken broth 3 cups chopped cooked turkey 1/2 cup diced seeded plum tomato (about 1) 1/3 cup fresh chopped cilantro 2 tbsp. fresh lime juice 1/2 tsp. salt 1/2 tsp. black pepper 8 lime wedges (optional) --Heat oil in large Dutch oven over medium high heat --Add onion; sauté 10 min. or until tender and golden --Add chili powder, garlic and cumin; sauté for 2 min. --Add oregano and beans; cook for 30 sec. --Add broth; bring to simmer; cook 20 min. --Place 2 cups of bean mixture in blender and process until smooth --Return pureed mixture to pan --Add turkey and cook until thoroughly heated (about 5 min.) --Remove from heat; add diced tomato, chopped cilantro, lime juice, salt and pepper; stir well --Garnish with lime wedges if desired Parmesan Sage Roasted Turkey Breast w/ Sage Gravy (350 cal.) 1 bone-in turkey breast (about 5lb.) 1/2 cup I cant believe its not butter spread (divided) 1/4 cup grated parmesan cheese 2 tbsp. chopped fresh sage 2 garlic cloves (chopped) 1 can (14.5oz.) fat free reduced sodium chicken broth 1 small onion 1/4 cup all purpose flour --Preheat oven to 325 --Arrange turkey, breast side up --Combine butter, cheese, 1 tbsp. sage and garlic in a small bowl --Rub mixture under and over turkey skin --Roast 1 hr. 15 min. or until meat thermometer reaches 165 deg. --Remove turkey to carving board and let stand for 15 min. --Pour roasting pan drippings into a cup --Melt remaining 1/4 cup butter spread in a 2 1/2 quart saucepan over medium high heat and cook onion and 1 tbsp. sage about 5 min. or until tender, stirring frequently --Add flour and cook 2 min.; stir constantly --Slowly whisk in broth and bring to a boil --Boil 2 min.; stir constantly; or until gravy is thickened --Skim fat from pan drippings then add drippings to gravy --Serve with the turkey. Honey Mustard Turkey Breast (250 cal.) 6 turkey breasts 1/2 cup honey mustard 3/4 tsp. dried rosemary (crushed) 1/2 tsp. onion powder 1/4 tsp. salt 1/8 tsp. garlic powder 1/8 tsp. pepper --Mix ingredients --Coat turkey breasts --Bake 1 3/4 hours at 325 or until done Turkey Roll ups Ingredients: 1/4 cup chopped cucumber, 4 tablespoons softened cream cheese (can use low fat) 3 large flour tortillas (you can use low carb wraps) 1/4 pound sliced smoked turkey breast Directions Stir cucumber into cream cheese, spread on tortillas, layer with turkey slices and roll up Can also slice these into smaller bite size for a party tray.
