Uncle Sam The character of Uncle Sam, the fellow with the white beard and patriotic top hat, probably got its start in 1812, when a meatpacker named Samuel Wilson was providing meat to the U.S. Army. He stamped his meat shipments with the initials U.S., and someone joked that the initials stood for “Uncle Sam,” who was sending food to the soldiers.
