VEGAN MENUDO! (+ recipe!) Every New Years eve I make a big pot of this and it lasts a couple of days. I wish I had a better picture of it all dressed up, but here it is. Traditional menudo uses pig stomach (yikes!) But in this recipe I use shiitake and crimini mushroom. Even the hominy is non GMO! Vegan menudo recipe: 28 oz can of red chile sauce 1 quart vegetable stock 2 large cans of hominy (Juanitas brand is non GMO) 4 oz package of shiitake mushrooms + 8 crimini mushrooms (almost a pound total) 1/2 onion (+some diced on the side for when its served, optional) 1/2 green bell pepper 3 tomatoes 5 cloves garlic 1 cup chopped cilantro (+ a little more on the side for when its served) 1 tblsp. Cumin 1 tblsp. Oregano 1 tsp sea salt 2 tblsp olive oil Splash of balsamic vinegar (optional) 3 quarts water Diced lemon or lime (for when served) Blend onion, bell pepper, garlic, tomatoes in food processor. Add olive oil to pot with veggies and simmer on medium/low about 10 minutes. Add the rest of the ingredients to the pot: red chile sauce, veg stock, mushrooms, cilantro, cumin, oregano, sea salt, hominy, water.....simmer all this on medium for at least an hour. Serve with fresh chopped cilantro, lemon or lime wedge and diced onion This recipe makes a large pot. Serves 4 to 6 at least. If you have any questions feel free to let me know.
