Vanilla Cookies with Royal Icing Diwali is a time when I like to gift hand made goodies to my friends and family. Usually on this day, people decorate their houses with flowers and apply rangoli outside their doors to welcome goddess Lakshmi. This year, for gifting, I wanted to make an edible Rangoli, I wanted it to be vibrant, colorful and a treat to the eyes. And when there is rangoli, diyas cant be too far behind. I used the left over cookie dough to and used cookie cutters to make the basic shape of a diya and then applied layers of royal icing with vibrant, colorful food colors to make the diyas come alive!
