Vanilla Steamed Cakes (Makes 8 cupcake sized cakes//Please eat within 3 days) You will need: 50ml milk (whole) 4 tablespoons sweetened condensed milk 40g sugar (granulated) 1 tablespoon vegetable oil 3 drops vanilla extract 100g plain flour 1 teaspoon baking powder A steamer (of any kind, I used bamboo), A large bowl, 8 cupcake/4 muffin cases (silicon or aluminium) Mix milk, condensed milk, sugar, vegetable oil, vanilla in the bowl.Sift in the flour and the baking powder.Place mixture into silicone/aluminium cupcake cases.Steam over boiling water (on a high heat) for 15 mins.Cool for a few mins and serve warm.Enjoy! Tip: If you want don’t want the cracked top (more rounded), reduce the high heat to a medium heat – still steaming for the same amount of time. Some tips: When steaming, use silicon or aluminium cases. Paper cases will make the mixture spread all over the bottom of your steamer. I speak from experience – tastes good but not exactly aesthetically pleasing :(Don’t worry if your cakes expand or crack at the top, they will have the same texture and will taste the same. Whether they look like a small round ball is really a matter of personal taste. Not only do the cakes turn out great but the batter tastes divine. No raw eggs! Salmonella freaks unite! I used a two tiered bamboo steamer for my cakes (my house owned one – thank you, asian heritage), and switched the top and bottom tiers after 7 minutes.
