Vegan pepperoni - I made a double batch of this yesterday (the recipe called for 1 cup of beans and there is approx 2 cups in a can). I also added 2 tsp of peri peri seasoning for extra bite. You can used crushed aniseed seeds instead of the star anise as the latter has a stronger flavour and can be a bit overwhelming. I formed the mixture into two big thick logs and steamed them for 90 minutes. Delish.
