WELSH RAREBIT (I thought this was a dish containing rabbits when I was young) ½ cup mayonnaise 3 tbs flour ½ tsp dry mustard ½ tsp Worcestershire ¾ cup beer 2 cups shredded cheddar cheese 8 slices white or whole wheat bread, toasted, halved diagonally 3 large tomatoes, cut into 16 slices turkey white meat slices* in 2-qt sauce pan combine mayonnaise, flour, dry mustard and Worcestershire sauce. Stirring constantly, cook over low heat 1 minute. Gradually stir in beer until thick and smoothe (do not boil). Stir in cheese until melted. Arrange 4 toast halves and 4 tomato slices alternately on each of 4 serving plates; spoon on cheese sauce. Serve immediately. Microwave directions: in 2-qt microwavable bowl, combine mayonnaise, flour, dry mustard and Worcestershire sauce. Gradually stir in beer and cheese. Microwave on high 4 minutes stirring vigorously after each minute. Serve as above. *optional. Based on liberty café’s menu in about 1957.
