Wacky carrot cake- gluten, dairy, egg free. 1 1/2 c. Flour 1/2 c. Honey 1/4 c. Coconut sugar ( or 3/4-1 c. White sugar in place of honey and coconut sugar) 1/2 tsp salt 1 1/2 tsp baking soda 1 1/4 tsp cinnamon 1/2 c. Oil ( I used coconut, could use butter) 1/2 tsp vanilla 1 1/2 Tbsp cidar vinegar 1/2 c. Water (about, depending on what kinds of flour are in the blend you use. Mine has a little coconut flour so it tends to need a little more liquid) 2- 4oz jars babyfood carrots (or 1 c. Cooked, mashed carrot) 2/3 c. Shredded coconut 1 tsp xanthan gum Opt- 8oz crushed pineapple. I left it out because Nathan cant have citrus fruits. But it tastes really yummy with it! Mix dry ingredients, add wet ingredients, mix well. Makes 12 cupcakes (or a 9in pan). Bake @ 325* for about 25 minutes. Enjoy!
