Was invited at the last minute to join a friend (her treat!) at Paul Quis restaurants one-year anniversary 9-course dinner with wine pairings...and after 4 hours of superb intensity, my taste buds are permanently spoiled!!! Cheddar cheese ice cream sandwiches are on the menu all the time and Ive decided I can live on salads and these brilliant treats for the rest of my life. I may make an exception for the sashimi short ribs, which are smoked for 5 hours, slow-cooked for 3 days, then sear-grilled at the finish and served with wasabi and pickled strawberry. Oh. My. Gosh. The season 9 Top Chef winner came by our table multiple times to converse and all the staff, though stressed by the 9-course event for a packed house, were knowledgeable and attentive and all seemed to be having fun!! A sensory overload experience with incredible company. I am grateful beyond belief!! And Acclimate Austin has a new favorite fine dining recommendation on the east side!!
