We Generally dont cook/practice any BBQ in The Winter. We do however cook many things in The Kitchen. Today we Seasoned some Fillets that all teams were given at The Sams Club National Contest. That was all we came home with from that contest.They were cut at 2 inches, Seasoned with Salt and Pepper with a little Herb de Provence.Sealed in our Vacmaster VP112, and cooked in our SousVide Supreme. They were taken to 124 degrees in 2 hours, then Pan Seared in Butter to 135. Topped off with Duck Fat and rested 5 minutes.As you can see they were absolutely Perfect.SousVide Cooking is my favorite way to cook in The Winter.That was our practice for this weekend
