We all know that Chipped beef on toast is the world standard widely known as SOS (need I conjugate that?) Have you ever encountered an SOS recipe based on red sauce? Back in 63, when I was stationed in Cyprus, Wednesday morning breakfast was a real JOY because they always served a Red SOS sauce also served over toast. I loved it because it was so hearty and stick-to-your ribs delicious. However, in my remaining career, I never again encountered this breakfast delicacy. Although it was obviously tomato based and mixed with hamburger, it didnt taste anything like spaghetti sauce. I inquired with places such as Americas Test Kitchen but no one else seemed to have heard of it. Maybe, it was just some Ole Navy Chefs own recipe. I tried, of late, my hand at recreating it myself but there was something missing. I struck on an idea while on my camping trip last week and this morning I gave it a try. I vaguely seem to recall the sauce tasting slightly sweeter than other red sauces. So, that said, I took 3, 1/4 lb., frozen hamburger patties (I didnt have regular hamburger on hand), partially defrosted them, added a quartered onion and ground them up in my Ninja processor, added a can of Manwich Sloppy Joe Sauce (I had in my pantry and didnt know what to do with) for liquid and heated it in a skillet. I was concerned that it might be too sweet, so I added a half can of Rotel (onion, tomato, hot pepper) sauce. I continued to stir occasionally until I felt sure the hamburger was fully cooked. I Served it over toast along with a glass of orange juice, and vala (sp) I had a close version of Navy SOS. I had seconds, and now I am stuffed and good to go for the remainder of the day.
