We just underwent a 6+ hour farm and flour mill organic certification inspection. A big part of this process is tracking a product off our (flour) shelf and showing who/what/where/when, similar to a product recall. Good organic processors have always been able to track each and every ingredient back to the grower who raised it, the cleaner who cleaned it and the truck that brought it to you. Another part of the inspection is to check and make sure that you dont have more of a product than you started with, to be sure you did not add cheaper conventional material and take advantage of that. This is certification, along with field histories of each field: seeds with tags/receipts, 3 or more years of crops and inputs and inspection of farm and physical plant.
