Cut broccoli into small pieces, boil, drain, rinse in cold water: You lose almost all the nutrients from broccoli in the boiling water. Rather you can lightly saute it in olive oil and cook in the broth before pureeing it. All nutrients remain in the soup. 2. Add 4 tbsp four to thicken the soup: You can very well skip the flour. Thicken the soup just by adding the butter, milk and cheese they mention in the recipe. 3. Use 1% milk, low fat cheese: Low fat milk and cheese are further processed dairy products. Use the whole dairy if you can but in reduced amount to keep the recipe healthy. While cooking, retaining the nutrients in our foods are equally important.
