Well another successful soup in the books! Last night I made a lentil soup which was a first for me. I used a recipe for inspiration but ended up making it my own! 8 cups of chicken broth 8 cups of veggie broth 1 small can of tomato paste 1 carrot 1 medium onion 6 cloves of garlic Sliced baby bella mushrooms 1 bag of frozen chopped spinach A bag of lentils Thyme 3 bay leaves Salt Pepper Olive oil Ham Bone 1 lb of pasta of choice (elbows) I started off by mincing the onion, garlic, and carrots and some of the mushrooms and sautéing them in the pot with some olive oil. I then chopped some mushrooms into bigger pieces and added them to the mix. Add in the broths. Add in tomato paste and the remainder of the whole mushrooms. Add the ham bone into the broth and bring to a boil. I shaved some of the ham off of the bone and shredded it and replaced it in the pot. Add salt, pepper, and thyme to taste. Add bay leaves and spinach. Once mushrooms have shrunk in size and all ingredients have cooked for about an hour or so, remove the ham bone and at this time add in the lentils(rinse lentils prior to adding to soup). Bring to a boil again. Reduce heat. Once lentils become tender. Add noodle of your choice. I added 1 lb of elbows. Boil till pasta is tender. Of course once platted I sprinkled with grated cheese!
