Well hello - this seems to be becoming a habit on a Saturday, but boy, did I need a lie in this morning! Yesterday was completely hectic & I didnt even have time to stop for breakfast or lunch - I started cooking at around 6.15am, delivered to the customer at 6.15pm, set out, dished out the salads & put together the canapes, left there at 7.45pm, stopped off for something to eat on the way home, had to sort out all the transportation containers etc., when I got back & finally sat down at 10.30pm. Phew! I now have a mountain of containers queuing for their turn in the dishwasher & will also have to pick everything up from the customers house later. But, Im actually on a bit of a high today - it was a 60th birthday party for 50 people & canapes for 30. As usual, I think I actually did too much - not sure when or if Im ever going to get rid of this inherent Welsh need to feed people. The customer is a pescatarian, so there wasnt much in the way of meat on the menu & she wanted quite a bit vegetarian. She chose some dishes & stipulated a few different cheeses. She wanted me to use asparagus, which isnt something I would have normally done at this time of year, as its not in season now so will have been transported from Peru, but shes the customer. She also chose 2 of the desserts. Menu was (those cooked yesterday are starred): Crostini with 2 different toppings* Blinis with 2 different toppings Sweetcorn & feta fritters with a topping Asparagus, parma ham & goats cheese filo rolls* Flaky cheese biscuits Parmesan & paprika biscuits Leek & goats cheese tarts Asparagus & cheddar tarts Crab & ginger tarts Spinach, feta & pine nut free form tarts* Cold poached salmon & dill sauce Smoked mackerel & watercress pate & french bread Mexican chicken salad* Vegetables a la grecque Sweet chilli coleslaw 4 bean salad* Butternut squash, bacon & rice salad* Vanilla cheesecakes with a fruit compote (these were scattered with berries when I was there) Carrot & walnut cake* Chocolate pots Mini welsh cakes As well as the cooking yesterday I also needed to do things like present & garnish the salmon & pate, decant the cheescakes onto serving plates, top the chocolate pots with whipped cream & grated chocolate, make the toppings for the canapes (slow-roasting tomatoes etc). Had a bit of a Bake Off moment with the carrot & walnut cake - I forgot to put a circle of baking parchment at the bottom of one of the layers & it all stuck to the pan - aahhhh! Did I have time to make another one? Well, yes I did, but only just - hence not stopping to have something to eat. I also miscalculated the amount of cream cheese I needed so had to fly to the local Co-op to pick up some more, which wasnt on my schedule. I have no idea if it went well at the moment, but it certainly looked good. Just lots of dirty dishes for met today - but at least Saturday Kitchen is back, but with Tom Kerridge this week, not James. As lovely as he is, its not quite the same. Have a lovely Saturday.
