Well, now that we have gotten you thinking about Christmas cookies....what is your favorite Christmas cookie? Do you like decorated sugar cookies? Cinnamon snickerdoodles? Snow cookies? Let us know. In fact, if you have a favorite recipe, post it below. We are always looking for new recipes, and you might even end up on our website blog! Ill post mine to get the party started! SNOWBALL COOKIES Ingredients: 1 cup butter, room temperature ½ cup powdered sugar 1/4 tsp salt (or less) 1 tsp vanilla extract 2 cups flour 1 cup chopped pecans powdered sugar, reserved Directions: Preheat oven to 350°. Cream butter and sugar. Stir in vanilla, salt and pecans. Add flour and mix well. Dough may be slightly crumbly-add a drop or two of water if needed only to incorporate all flour. Shape into 1 balls and place on ungreased cookie sheet. Bake at 350 degrees 15-20 minutes. Cookies should be golden on bottom and pale on top. (These should be light in color. Do not brown!) Cool and roll in powdered sugar while warm and then again when cool. These shortbread cookies are not real sweet, but the powdered sugar that they are double-dipped into makes the magic happen. I sometimes just roll the dough out 1” thick and cut into squares or make crescents out of them, but the cookie is too delicate to hold a cut-out shape. Variations: For cookie: mini-chocolate chips, cocoa powder, crushed peppermint candy, or switch vanilla extract to almond extract Roll in extras: powdered peppermint candy, cinnamon sugar, or make a thin glaze and top with coconut, extra nuts, chocolate candies
