What a fun time of year for cooking - this is a recipe I did last year out at Blumen Garden in Sycamore. They look impressive, taste great and are very easy to put together. Grilled Zucchini Steaks 6 medium zucchini, washed 3 cloves garlic, minced ¼ teaspoon sea salt 3 tablespoons olive oil 2 tablespoons cider vinegar ½ teaspoon each sea salt and black pepper Slice zucchini lengthwise. Mix ingredients to create a marinade. Coat the zucchini with the marinade. Grill, covered, 8 to 10 minutes until tender, turning to evenly cook. Simple sauce to Serve with the Grilled Zucchini 1 cup roasted red peppers, thinly sliced 1 ½ cups mixed chopped herbs (parsley, cilantro, basil, oregano) 1 tablespoon olive oil 1 tablespoon cider vinegar 1 tablespoon fresh lemon juice and ½ teaspoon lemon zest Toss the vegetables together with herbs, vinegar and oil.
